- 6 Roma (plum) tomatoes, quartered
- ½ onion
- 2 chipotle peppers in adobo sauce, or more to taste
- 3 cloves garlic
- 1 tablespoon olive oil
- 2 quarts chicken stock
- 1 pound ground beef
- 1 pound ground pork
- 3 Roma tomatoes, seeded and finely chopped
- ½ onion, finely chopped
- 1 egg
- ¼ cup uncooked basmati rice
- 1 tablespoon finely chopped mint leaves
- ¼ teaspoon dried oregano
- salt and ground black pepper to taste
- 4 potatoes, peeled and cubed
- 4 small zucchini, cubed
