- 3 cups beef broth
- ¾ cup red wine
- 1 ½ pounds potatoes, cut into chunks
- 3 carrots, cut into chunks
- 3 stalks celery, cut into chunks
- 3 parsnips, cut into chunks
- ½ teaspoon dried thyme
- 1 small bunch fresh parsley, chopped
